Asian Lettuce Cups from Steamy Kitchen
Last week wasn't the best for me. I got home VERY late Sunday night from Florida. It seemed like I was trying to play catch up for the rest of the week and meal planning never happened. I finally went to the grocery store on Wednesday evening after noticing that we had no fresh fruit or veggies in the house. Before heading out I made a meal plan for Thursday the 11th through this coming Sunday the 21st. I was very happy to say that I spent $165 dollars at the store and I have enough food for 11 meals. See, you can eat REAL FOOD and not break the bank. My inspiration this week was Pinterest, hope you become inspired too.
Real Food Meal Plan
Monday: We will have Shredded Chicken Tacos with blue corn taco shells. In the morning I will place boneless skinless chicken breast in the crock pot with a jar of salsa and enchilada sauce. Once the chicken is cooked I will shred the chicken and place back in the crock pot until we are ready to make the tacos.
Tuesday: I teach all day on Tuesday so I have about zero time to prepare meals. When I saw this meal I knew it would be a perfect fit for those busy days. I can marinate the chicken the night before and just place in the oven to cook. I will serve this Dijon Mustard Chicken with Quinoa and roasted asparagus.
Wednesday: I saw this recipe and I looked so fun. Asian Lettuce Wraps. I have frozen ground turkey so I didn't need to buy meet for this dish.
Thursday: I don't teach on Thursdays so it gives me a little more time to prepare meals. I plan to make a Horseradish Potato-Crusted Mahi Mahi with french green beans. I have Mahi Mahi in the freezer from Trader Joes. I lived in South Florida for 9 years and I got accustomed to having very good fresh fish. When I moved to the NE I couldn't believe how expensive fresh fish was. When I started going to Trader Joes I bought some of their fish and I was happily surprised to find out that their fish does not taste frozen, it's good and inexpensive.
Friday: With the leftover shredded chicken from Monday's tacos I will make Chicken Enchiladas served with Avocado Corn salad
Saturday: I will be at Type A Philly Advanced Conference so the boys will be on their own. I think we will have enough leftovers from the week for them to figure something out.
Sunday: I have Shrimp and turkey sausage in the freezer so I thought this Cajun Slow Cooker Stew would be perfect for a busy Sunday. I really hope to have an opportunity to try out this new bread recipe to go with it.
