Homemade Bean Soup

A few weeks back I started my journey into the world of Ham. I made a pretty delicious baked ham last week for my house guests, everyone LOVED it! Since I am a newbie Ham eater and baker I needed some recipes and I got some great ones from Who Says 8 is enough, table for two and a half, Tabatha Ward, Chef Cili Yack's, Frugal Philly Mom, my mother in law and my own mother. For starters I think I need to buy another ham to try out all these dishes. I am still working on all the recipes and I hope to announce the winner (excluding my family) after Easter.
As soon as I woke this morning I just knew it was going to be one of those rainy lazy days. The sun was no where to be found and there was a bit of chill in the air. I seriously wanted to nap this afternoon but with Mom2.0Summit coming up this week there was no time for relaxation. I wanted to prepare a dinner that I could just leave on the stove so we could eat when we wanted to, and could make ahead of time. I remembered the ham bone in the freezer, it didn't have a lot of meat on it so I knew I could make any of the dishes that were suggested. I thought of a soup that we would have a lot growing up, and to this day my family loves it. I think it's one of the meals my oldest brother requests when he comes to visit my parents. It's simple, inexpensive and makes a ton...so it's great for another meal.

Bean Soup
Ingredients
1 ham bone with extra meat still on it
8 cups water
16 oz navy beans
8oz diced onions
8oz diced carrots
8oz diced celery
16oz cubed peeled potatoes
2 bay leaves
salt and pepper to taste
Directions
1. Rinse the beans and take out any bad ones. Once that is done add them to the 8 cups of water. Add the onion, ham bone, salt, pepper and bay leaves then bring to a boil. Once it's boiling turn on med-low for an hour or until beans are cooked through but not mushy. Once the beans are done, take the ham bone out and let cool so you can handle it. If you have any pieces of fat in the broth take out then add the carrots and celery. Set the timer for 10 minutes.
2. After 10 minutes add the potatoes and pick the meat off the ham and add that to the soup. Let cook for an additional 20 minutes or until potatoes are cooked through.
3. Once the soup is done, take out the bay leaves and serve with bread and salad if desired. The leftovers can be frozen for another meal.
