Summer is a very busy time for us as a family. We travel a lot, spending most of the summer at the Shore, Michigan or West Virginia. Starting tomorrow the boys and I will be traveling until the first week of August. Spending time on the Great Lakes as I did as a child, going to the Shore was my husband’s childhood summer home and then ending the trip by heading to my in laws mountain home in West Virginia. We will be staying with family so meals will still be healthy (for the most part) and homemade but I can’t depend that I will be cooking the weekly meals.
I’ve come up with a
plan. I was looking through my kitchen the other day and noticed all the
cookbooks and food magazines I have. I decided that each week I will pick recipes from my favorite inspirations and share with you. I will make a menu
plan using recipes from the cookbook or magazine I choose. As a bonus - at the end of our trip I will give away the cookbooks I shared with you or a subscription to the magazine so you can become inspired too.
The first cookbook that I came across was – Everyday Cooking with Organic Produce I thought this would be a perfect book since the CSA and Farmer Market season is in full swing. The reason why I love this book is because when I have a vegetable like Fennel I can go to the section that gives ideas on Fennel along with recipes. I like that you are not looking through many recipes trying to find one using that certain vegetable or fruit, it’s all at your fingertips.

Here are some of my favorite recipes from Everyday Cooking with Organic Produce. This book is perfect for making a REAL FOOD Menu Plan.
Monday: Taco Salad with Grape Tomatoes, Chicken and Avocado – grape tomatoes are popping up already in my garden which would be perfect for this meal.
Tuesday: Grilled Chicken served with Cauliflower Au Grain – this side dish is perfect with any sort of meat dish and kids love it because of all the cheese.
Wednesday: Broccoli Mac n’Cheese helps get those veggies into picky eaters and parents can feel good about giving it to their kids because it’s made is REAL FOOD.
Thursday: Lemon Spaghetti with heirloom baby tomatoes and asparagus – this meal just screams summer doesn’t it? Just thinking about it makes me want to pour a nice glass of white wine to go with it.
Friday: Pastured raised steaks served with Rustic Mashed Potatoes with Beet Greens and Roasted Garlic – perfect ending to a long summer week. This would be great for entertaining, something a little out of the ordinary for your guests.
Saturday: This is a perfect Meatless Monday meal – Colorful Bell Peppers with Rice and Beans, if you choose not to go meatless you can easily add pork, chicken or beef to the meal.
Sunday: Here is
another pasta meal that is light which is great for those hot summer nights. Rosemary
Spaghetti with Roasted Asparagus. This
would go well with a grilled salmon or light fish.
Rustic Mashed Potatoes with Beet Greens and Roasted Garlic – recipe from
Everyday Cooking with Organic Produce
1 small head of garlic, roasted
2 pounds of small Yukon gold potatoes
1 teaspoon salt
1 pound of beet greens, roughly chopped
3 Tablespoons of olive oil
Salt and Pepper to taste
1. Once garlic is roasted, take out of the skin and mash with a fork then set aside.
2. Place potatoes in a pot of water, add salt and let cook for 10 minutes. Add the beet greens and cooking for another 10 minutes
3. Drain and reserve ½ cup of cooking water
4. Add garlic and water to potatoes and greens. Mash until you get a smooth consistency.
5. Add Salt and Pepper to taste. I’d also add a bit of real butter for added richness.
