If you have been reading my weekly meal plans you have noticed a trend....I am extremely busy and this week is no exception. I will actually need to make a unplanned trip to Florida to visit my parents. My mother is battling Lung Cancer and I need to be down there for her and my father. That means I will be flying out Wednesday evening and not returning until Sunday. That also means my husband will be on dinner duty for most of the week. YIKES.
When I leave for business trips it's normally just for one day school day and the rest weekend but this time not only will my husband have to take care of 3 weeknight dinners but also getting the boys to Karate and Baseball practices. I totally trust my husband to do an amazing job but he would be the first one to tell you that he doesn't multitask very well.
I plan on making some freezer meals for my husband so he can easily put a fast meal together for him and the boys during the days I will be gone. I know that he will have a night or maybe two of take out or a hot dog night but at least it will not be night after night of not so healthy foods.
So as a family we are able to just have one meal together this week because tonight we both have evening meetings. On Tuesday I plan on making a slow cooker meal that will make enough for leftovers which my husband can re-heat later on in the week.
Weekly Meal Plan
Monday: Grilled Cheese on homemade bread served with Tomato Soup
Tuesday: Slow Cooker Garlic Chicken served with Rice or Couscous
Wednesday: I will have made ahead and placed in the freezer Cilantro Shrimp that my husband can put together and make soft tacos. The recipe calls for carrots, I am going to skip that step and just use the cilantro and shrimp.
Thursday: Slow Cooker Salsa Chicken which is very similar to the Chicken Salsa recipe I make but I will have the chicken and salsa already in a bag ready for the slow cooker. Once the chicken is done you need to shred the chicken and place it in shells for tacos or even lay over chips for nachos.
Friday: I am sure this will be a take out night for the boys unless they want leftovers from earlier in the week.
Saturday: Turkey Meatballs and Sausage in the slow cooker with pasta sauce. They love having it over snake pasta - AKA angel hair.
Sunday: The leftover meatballs and sausages will be used for sausage and meatball sandwiches and served with sweet potato fries and raw veggies.
