I recently had a Cooking Birthday Party for a 7 year old girl and the theme was "Duckling Wants A Cookie" so of course we made cookies. These were a huge hit with the kids and parents. I loved when I told the parents the ingredients they were shocked of how good they were....see healthy or healthier foods can still be tasty! 



Oatmeal Banana Chocolate Chip Cookies

Ingredients

·         1 cup whole wheat pastry flour

·         ½ cup white flour

·         2 cups oats

·         1 tsp baking soda

·         1/2 tsp salt

·         1/2 tsp ground cinnamon

·         4 tbsp unsalted butter, room temperature

·         1/2 cup turbinado/raw sugar

·         1/2 cup unpacked brown sugar

·         1 large egg

·         1 mashed banana

·         1/2 tsp vanilla extract

·         1 cup dark chocolate chips

Instructions

1.     Preheat the oven to 350 degrees

2.     In a medium bowl, whisk together flour, oats, baking powder, salt and cinnamon.

3.     In a large bowl, cream together the butter and the sugars.

4.     Add the egg, followed by the mashed banana and vanilla extract.

5.      Stir in the flour mixture and the oats until just combined.

6.     Stir in the chocolate chips.

7.     Drop heaping spoonfuls onto baking sheets, flattening each cookie slightly. Bake for about 10-12 minutes, or until cookies become light brown at the edges. Do not overbake these cookies!

8.     Let cool on baking sheet for 3 or 4 minutes, then transfer to a wire rack to cool completely.
