
Monday: Meatless Monday meal – Eggplant Rollantini which can
be prepared the morning of or even the day before and just placed into the oven
when it’s time to cook. (Recipe coming soon)
Tuesdays: Tuesdays are a busy day for us since I teach full
day. I think Soup and Sandwiches are one of the easiest things to cook on busy
nights so we will have Homemade
Tomato Soup and Turkey Club Sandwiches for dinner.
Wednesday: Vegetable Miso Soup
with added Shrimp served with a salad. This is also an extremely easy soup to
make and freezes well. I love it for lunch, and take it in a thermos and drink
it on my way to work or when I am freezing on the playground. If you choose to
freeze it, I would not add the shrimp to the portions you freeze.
Thursday: My husband is FINALLY on board with Indian foods so
I will start making more of it for dinners. One of my favorites is Crock Pot Curry
Chicken served with Naan bread.
Friday: I need to head into NYC for work at Happy Family so
it will be a late night for me so I think the boys will order in.
Saturday: The weather is turning really cold this weekend and
one of our favorite things to eat on cold nights is French Onion soup.
It’s so filling that we normally just have a salad with it. This is also
something that I make a ton of and freeze the extras for other meals.
Sunday: Lazy Sunday means a day of cooking. I plan on making
Crock Pot Chicken Chili with cheese, onion and mushroom quesadillas
