This is going to be a short week for us. We are heading to Michigan for a family wedding on Thursday and will be gone through the weekend. I didn't want to spend a ton of money at the grocery store this week so I took inventory and trying to clean out the pantry, fridge and freezer. By doing this not only do you use up foods that you already have but save a ton of money too.
Monday: Carrot Ginger Soup that was in the freezer and Homemade Pizza w/ roasted red peppers, spinach, onion and mushrooms which is a Meatless Monday MealTuesday: Baked Ziti that was leftover from last week. I placed half the pan into the freezer for another meal and it's getting used up this week. I will serve it with Roasted Garlic Asparagus Wednesday: Salsa Chicken served with rice and salad - this is probably the easiest dinner to make on those busy nights when you are swamped. Recipe Below
Salsa Chicken
Ingredients
2-3 boneless skinless chicken breast
1 jar of organic salsa - its best to used cooked salsa not fresh
Mexican Cheese
Directions
1. Place chicken in a glass baking and pour the jar of salsa on top. Cover the baking dish with foil and cook for 30 minutes at 350 degrees.
