This is going to be a short week for us. We are heading to Michigan for a family wedding on Thursday and will be gone through the weekend. I didn't want to spend a ton of money at the grocery store this week so I took inventory and trying to clean out the pantry, fridge and freezer. By doing this not only do you use up foods that you already have but save a ton of money too. 

Monday: Carrot Ginger Soup that was in the freezer and Homemade Pizza w/ roasted red peppers, spinach, onion and mushrooms which is a Meatless Monday Meal

Tuesday: Baked Ziti that was leftover from last week. I placed half the pan into the freezer for another meal and it's getting used up this week. I will serve it with Roasted Garlic Asparagus  

Wednesday: Salsa Chicken served with rice and salad - this is probably the easiest dinner to make on those busy nights when you are swamped. Recipe Below



Salsa Chicken

Ingredients


2-3 boneless skinless chicken breast
1 jar of organic salsa - its best to used cooked salsa not fresh
Mexican Cheese

Directions

1. Place chicken in a glass baking and pour the jar of salsa on top. Cover the baking dish with foil and cook for 30 minutes at 350 degrees.

2. Uncover and place Mexican cheese on top and place back in the oven for 5-10 minutes until the cheese melts.  


Serve with rice and salad.
