I didn't do a Meal Plan last week. I was in Washington DC for the first two days of the week for the
Shot@Life Summit and then came home to a Sinus Infection. My husband was so nice to take the kids to WV for the weekend so I could rest up and get well. I've got some meds, lots of sleep so I am ready to roll this week.
Weekly Meal Plan
Monday: The family is coming home so I want to make a nice Meatless Monday dinner for them. .Barley Soup with bread and salad.
Tuesday: Turkey Meatloaf with Mashed Potatoes and Roasted Veggies - I will make up the Meatloaf the night before so I just need to pop it in the oven when I get home from teaching all day.
Wednesday: Roasted Carrot Ginger Soup with Turkey Club SandwichesThursday: Hosting Kids Book Club - make Baked Ziti which is something everyone will eat. Friday: Leftover Night - great way to clean out the fridge Saturday: My husband and I have a Date Night scheduled so I will order Pizza for the kids and the babysitter Sunday: Chicken Biscuits Casserole - I will make a double batch so I can freeze the extra for another meal
