I've been more than a bit of a slacker when it comes to creating my menu plans. I plan on starting 2013 off right by becoming more organized with my menu plans. As I've said before, making weekly menus not only keeps you organized but also saves you a ton of money. This week I spent $150 and got enough food for 7 complete meals. All ingredients are either local, organic and all real foods. 

Since the holidays, ok really since Halloween our diet hasn't been as healthy as I would of liked. Lots of holiday parties with tons of rich foods, sweets, wine, and cocktails. So we are getting back on track with a very healthy menu plan to start 2013 off on the best foot possible. 


 


Weekly Menu Plan - Starting the New Year off Right

Monday: For Meatless Monday we have Kale White Bean and Potato Stew on the menu - I will serve it with a loaf of crusty sourdough bread. I love to make a ton of soups, stews then freeze unused portions for other meals. It's a great time saver and it saves you money too. 


Tuesday: Grilled Salmon with Bok Choy with Avocado Salad. I found this recipe last year when I did my New Year Cleanse and I am bringing it back into the dinner rotation. I really don't know why I ever stopped, it's so yummy, You can serve it as is or with Quinoa or Couscous. 
 


Wednesday: It's going to be a busy day so we are serving up a new recipe that was given to me by a O'Boy! community member. Beans and Chicken is a simple dish that can be made in a crock pot so it's perfect make ahead meal.


Thursday: We have our kids book club so we will heading to a local diner with friends, my hubby will be on his own with leftovers. 


Friday: At the end of the week I am done, and really not in the mood to cook much. Lately we have been ordering out but this week we are getting back to making meals. Homemade Pizza is easy, cheaper and healthier than take out. We make it with whole wheat crust, fresh veggies and the use of Mozzarella and top with goat cheese and arugula at the very end. It's so yummy. 


Saturday: Date Night so the kiddos will be eating on their own. I will make Turkey hot dogs (Applegate farms) with leftover stew and fresh fruit.  


Sunday: Finally a lazy day so I am going to make Pesto Chicken Sausage with Pasta. It's a great meal to start mid day and keep in a slow cooker until you are ready to cook the pasta. To switch things up a bit I will be serving it with rice pasta
