This winter has been crazy with tons of snow, many COLD  days where you just want to stay indoors. I've been using my crockpot a lot lately making all sorts of things like pulled BBQ Chicken, Turkey Chili, Chicken and Dumplings and today I decided to cook a Whole boneless Turkey Breast. I find that using the crockpot give me so much more free time during the day for other things like laundry, work, running after 2 little ones and spending time with my husband on the weekends. I even had enough time at the end to make a fantastic Apple Crisp that is a bit healthier for you too. 

CrockPot Turkey


I bought a 2.7 lb boneless organic Turkey Breast at WFM. It was a bit more expensive at around $16 total but we have enough left over for a few lunches throughout the week. 

4 carrots peeled and cut into middle size pieces

1 onion diced

3 medium potatoes peeled and cut in big pieces

1/2 cup of chicken broth

salt

pepper

Herbs de Provence Seasoning (I use Penzeys Spices)

Rosemary (ground)

Olive Oil

Start with dicing the onion and placing at the bottom of the cockpot, then add the carrots and seasonings. Take Turkey out of packaging and rinse well and pat dry. Add seasonings and olive oil and run generously around the whole turkey then place in crockpot. Peel and cut potatoes and place around the turkey and then add the broth. 

Put the crockpot on low and let cook for about 6 hours. 

My husband likes mashed potatoes, so I took the potatoes out and mashed them. Take the turkey and carrots out and then strained the broth. After the broth had been strained place it back into the crockpot and added 2TB of cornstarch to 1/4 cup of water and then mixed into the broth to make a thin gravy.Afterwards place the turkey and carrots back in the crockpot on warm.


I as other side dishes I roasted french cut Green Beans with shallots in the oven and made stuffing.


Then to top off this dinner I made...


Apple Crisp with a healthier twist


5 large Granny Smith apples

1 TB of Cinnamon

1 tea. of Nutmeg

1/3 cup of Brown Sugar


Mix well and place in a well buttered baking pan.

Topping

1 cup of Oats

1 cup of Whole Wheat flour

1/2 cup of brown sugar

1 TB of Cinnamon

1 tea. of Nutmeg

8 TB of very cold unsalted butter but in small pieces

Mix all these ingredients together until well incorporated, using your hands seem to work best. Place the mixture on top of the apple slices and bake at 350 for about 50 minutes. Serve with vanilla frozen yogurt and nice cup of coffee.
