One of my favorite things to make on cold days during the fall and winter is Chili. I like all different kinds; White Bean, Vegetarian, Buffalo Chicken or just regular made with either ground turkey or chicken. We don't eat pork or beef so if you do this recipe can be easily made with those meats as well.
I used my Ninja Cooking System when I made this Chili. I love it because everything can be done in one pan. When using the Ninja you can saute the meat and onion first on the stove top setting and then put it on the crock pot setting to cook the rest. So nice to only dirty one pot! Crock Pot Chicken ChiliIngredients2 lbs of ground chicken (again you can use pulled chicken or ground turkey, beef or pork)1 can of black beans
1 can of red kidney beans
1 15oz can of diced tomatoes
1 32oz can of crushed tomatoes
1 yellow onion finely diced
2 carrots finely diced
2 celery stalks finely diced
4 gloves of garlic minced
1 sweet pepper (either red. yellow or orange) finely diced
1 cup of frozen corn (optional)
3 TB chili powder
4 Teaspoons cumin
1/2 Teaspoon red pepper flakes
Hot Sauce to taste
Toppings
Sour Cream
Cilantro
Green Onions
Grated Cheese
Limes

If you don't have a Ninja then you will need to brown the ground meat in a pan with the onion and garlic using 3 TB of olive oil. Season with salt and pepper
While the meat is browning add all the other ingredients into the crock pot. Once the meat is done add to the chili ingredients and place on high for about 5 hours.
