The last day of school is Wednesday - YAY! The beginning of the week is pretty busy with end of the year parties for kids and adults. We are still in baseball with hopes to finish playoffs this week if the rain stays away. I also want to go strawberry picking this week, so we will need easy meals that I can throw together in no time. I seriously have no idea how I would do it if I didn't create a meal plan every week.
The first time I watched the movie FOOD INC was over 2 years ago. It
was a life changing moment. I always had been health conscious, researched foods and the benefits of good foods but I didn't educate myself
fully on all the toxins hidden in the foods we eat. After seeing how our food system has changed
since the late 80’s because of Monsanto it made me realize that we are slowly killing
ourselves without recognizing that we are doing anything wrong.

I will not spend this weekend with my sons. I am traveling
to Florida to be with my mom for Mothers Day. One thing I’ve learned over the
last year after finding out my mom has stage 4 lung cancer is that quality time

Just got back from Mom 2.0 Summit yesterday and I have to say I am BEAT! I can hardly keep my eyes open and I have NO IDEA what to plan for this week for my Real Food meal plan. I do know that it's going to be a bit healthier than usual because husband and kids didn't eat very well while I was away. My husband called himself a "train wreak" while I am away. He tries so hard and I appreciate everything he does but he just isn't a multitasker - not many men are, that I know anyway.

As you know I love the crock pot, as a busy parent I need to make the most of the little time I have each day to prepare a healthy meal for my family. Well my meal plan for last week was almost a complete bust. Out of the 7 meals I planned I made only 4 of them, does that happen to you often? This is going to be a short week for us. We are heading to Michigan for a family wedding on Thursday and will be gone through the weekend. Boy, how life has changed since having children and being married for over a decade.
BEFORE - I was excited to go out with the girls, boyfriend, husband to let off a little steam from the crazy work week. I loved knowing I could let my hair down and not have to worry about getting up on Saturday morning.

As you know I've just become a Shot@Life Champion and went to the Summit in DC earlier this month. One of the many new things I learned while at the Summit was a new app called Charity Miles. Apricots is one of my favorite foods to make for babies and even older children. The sweetness of the apricot works well with grains, plain yogurt (for babies over 6 months) chicken for toddlers and above, the possibilities are endless. When blending apricots I choose to use dried organic apricots and re-hydrate them using boiling water. The reason why I do this is because frankly using fresh apricots is a real pain in the a%^! As busy parents we want to make our lives as easy as possible.

It's been a crazy day so I am a bit late with getting out my weekly meal plan. We have those weeks where things don't go as planned, that is exactly what happen to me last week. For one reason or another I didn't have a chance to make the French Onion Soup so it's going on this week's meal plan.

One of my favorite things to make on cold days during the fall and winter is Chili. I like all different kinds; White Bean, Vegetarian, Buffalo Chicken or just regular made with either ground turkey or chicken. Chicken stock is one of the easiest things to make and it costs almost nothing. Whenever I get a rotisserie chicken from the market or make my own whole chicken I save the pieces, extra meat, skin and use it for stock. It makes about 2 quarts but if you want to make larger batches to freeze a ton I also like to use Barefoot Contessa's recipe.and place a few sets of leftover chicken carcasses in the freezer until I get enough to make a huge batch of stock.

I've been more than a bit of a slacker when it comes to creating my menu plans. I plan on starting 2013 off right by becoming more organized with my menu plans. Last year I started 2012 with a full month Cleanse and loved it. One of the many recipes I found that I then made over and over throughout the year was a Vegetable Miso Soup. I make big batches and freeze leftovers for other meals. It's great for lunch or dinner. If you wanted to add chicken or even shrimp to the soup or serve it on the side on a bed or arugula.

I discovered Quinoa about 4 years ago when Happy Family came out with a new product, and then started using it in other products they made. and we have traveled with our children from day one. I’ve taken my first childon road trips to grandparent’s houses and airplane rides. When we had our 2nd

I love wearing Maxi Dresses in the summer. They are perfect to throw on after the beach, night out or when running errands during the week. With the heat this summer they are cool and very flattering for most body types.

I love granola, I could eat it as cereal, over yogurt, or even on top of ice cream. My family feels the same way about granola so you can imagine how much we go through. I love Shepards Pie, there is just something about meat, veggies and potatoes all mixed together that makes me happy inside. This year we are hosting a St. Patrick's Day Open House and I thought this would be a perfect dish to make. Not only is it a crowd favorite but you can make it ahead of time and then pop it into the oven when you are ready. You can even make this a few weeks in advance an stick it in the freezer.
My son is constantly looking for ways to make things from recycling items into something new. He mainly wants the boxes to turn into race tracks, homes for this animals or stations for his train. I fell in love with Indian food when I lived in London for a year. There was a great little place just down the street from where I lived, and I would either get take out or eat in at least once a week. I grew up picking beets in my aunts garden and eating beets all summer long. I loved them just plain and in salads. One of my favorite ways to cook beets is by roasting them. This past season I had a massive amount of butternut and acorn squash in my garden. It was my first time ever planting these vegetables and I had no idea how quickly it would spread throughout my garden. I couldn't pick or eat them fast enough.

Making my own yogurt has been on my to do list for ages...well I finally tackled it last week and it was one of the easiest things to make. "ownership" in the meal they are more apt to eat it or at least TRY
it! Baby steps right?? Just remember, your kitchen might be a bit messier and

I am in full holiday mode. Presents are bought, wrapping is being "worked" on and my menu is planned. To beat the rush I went to my local Trader Joes and Farmers Market to purchase everything for Christmas Eve, Christmas morning Brunch and Christmas dinner. I schuduled a time that it wasn't during the morning or evening rush, the stores were next to one another which helped a ton. I also gave myself a break and hired a sitter to come and watch the boys so I could shop in peace.
It's hard during normal weeks to find the time to eat as a family. Now that the holiday season are on our heels our nights are getting booked with shopping, holiday programs and parties so family dinners are becoming even harder to make happen in our household.

One of the things I love most about
eggs is that they are so versatile. I can enjoy an egg for breakfast, lunch or
dinner. One of my favorite dishes to make when I am on my own is a version of Barefoot
Contessa's Herbed Baked Eggs from her Barefoot in
Paris Cookbook. It's easy, and good enough for one or you can make them for

I love soup,
there is just something comforting about it. A soup that I always wanted to try
but never did was French Onion. Traditionally it’s made with beef broth but

I can't believe I never thought of this before, but thanks
to West Philly Mama my
mind is FULL of ideas!!! Recently I made Applesauce
with the children at The Walden
School. When the finished product was done each child got to take a
container home with an attached recipe card. Being able to bring that recipe
card home is a great way for the children to remember the activity they did
with me and also jog their memory of the steps so hopefully they too can do
this at home with their parents....
One of my favorite fall smells are apples cooking. Whether I
am making an Apple
Pie, Apple Crisp or just baking apples with a little cinnamon for
applesauce....it all smells delicious and makes our home seem very warm and

Going Apple Picking on Monday gave me the inspiration to

This year was the first year that I planted corn. Corn on the Cobb is one of my favorite summer vegetables and I've now turned my sons into huge fans as well. At the beginning of our planting season my boys and I design what vegetables we will grow this year and corn was one of them. I was amazingly surprised at how easy it was to grow corn, we did start from plants but they were tiny as we put them in, but within a few weeks they were thriving!
Did you ever think about all the waste that goes into celebrating Halloween? When I found out that swapping half the costumes kids wear at Halloween
would reduce annual landfill waste by 6,250 tons, I knew I had to do something to help educate my community. I found this amazing site called Celebrate Green and noticed all the wonderful eco-friendly choices they had for celebrating not only Halloween but all holidays.
Got a Picky Eater on your hands? This is one of the best
pieces of advice I can give you, and I promise you will see results!

children have changed throughout the years, everything needs to be done right

One of the best ways I think to use up garden cucumbers is to make a salad. It's fast and can last for days in the fridge. I grew up with my mother making the traditional cucumber salad with vinegar, sugar and white onion. I wanted to change things up a bit so I put a twist on this old time favorite and it is now the hit at summer picnics, great for camping and lite summer dinners.

Recently my friend came over and gave me 2 jars of homemade

I know I may be a
little late with this post but better late than never right? When planting my
garden I do about 1/2 plants and 1/2 seeds. I've started some seeds directly outdoors
about a month ago; lettuce, spinach, carrots, beans and radishes. I also
started seeds indoors; yellow grape tomatoes, heirloom zucchini, long
hot peppers, and melons.
I have to say I find it much easier to start from seed when I am planting
directly into the ground, planting indoors doesn't give me much luck...

Now that Spring has sprung, the weather is nicer, days are longer, tee ball started, garden is being planted and we are just plain BUSY...we have forgotten about dinner! Since joining the co-op, picking up foods from The Family Cow and making my own breads I've noticed that my knives are not that great. Since moving to the Philadelphia area and starting our garden about 4 years ago we wanted to compost. I seriously can't believe it's taken us this long to finally get a real compost bin a few weeks back. Now I can't imagine not doing it, composting has become a real family affair around here. My boys know that their banana peels go in our kitchen compost bin and they share the responsibility of taking it out when it's full and placing all of our food scraps in the Compost Bin outside.

My family is venturing into uninhabited waters, we have decided to start eating ham again. If you didn't know we are a poultry and fish eating family. I personally haven't eaten pork or beef since I was about 18 years old. I was a fish-etarian until I got pregnant with our first child and needed to get more iron in my diet so I chose to start getting poultry again. When I met my husband 13 years ago, he wasn't eating pork or beef either so naturally we kept that way of living.

This past weekend I was fortunate enough to be a sponsor at the second luncheon for Girls Lunch Out. It was great to see all the women that I chat with online and meet some new friends too. One of the things that I gave away to all the guests that is a one favorite or ours...Apple Squash Cupcakes. When you have mornings that you are running behind it's easy to just pass by breakfast or give your children something not that healthy. When you have only a short amount of time in the morning try making a smoothie to take on the go.

In my latest Newsletter I mentioned that I saw this great post by Philly Burb Moms about homemade Valentines. There were a lot of great ideas but one that stood out for me was the crayon making activity. Now doesn't that make you SMILE! I thought it would and boy do we need a pick me up after all this yucky winter weather! I think all this snow and ice is even getting my kids down, my oldest was thrilled today when he learned from Punxsutawney Phil that we only have 6 more weeks of winter!
So if you or your kids need a little sunshine in their life just make this cute open face rice cake sandwich for their lunch or snack...everyone is bound to get a little happier!

As a child the thing I enjoyed most after playing in the snow was coming inside and enjoying a nice cup of Hot Chocolate...not much as changed since then. Today
has been one of those days, there was no school because of the weather,
yesterday was a holiday so therefore NO SCHOOL and my oldest has been sick with

I think Beets are one of those foods that you either LOVE or HATE, I happen to be in the LOVE category. When I was a child spending summers on my Uncle's farm in Michigan I would help my Aunt and Grandmother harvest all the veggies. Beets were one of the veggies I loved the most, I know that seems a bit weird but it's true.
As an adult I began roasting beets with red onion which is perfect with a salad.

I've been wanting a deep freezer for along time now and I finally got one from Santa husband this year. My husband felt bad because it wasn't something "just for me" but I was beyond THRILLED, it's amazing how things like a deep freezer gets me excited. I love to bake but never really got into making sugar cookies until recently. It's something fun to do with my boys and I got these fantastic cookie cutters this year that I just had to use.
On Christmas eve we were busy in the kitchen, the kids have a small table that I brought in for them to sit at so they had their own space.
