Weekly Menu Plan for Busy Moms!

 Another busy week is ahead for us and I don't think there is a end in sight! So I have to think of meals that I can prepare ahead of time so that we at least get a few nights of family meals. I have to say that the Crock Pot is my best friend during the week. I don't think I could live without her! What is your must have in the kitchen for those busy weeks?

Who doesn't find it challenging in the mornings, sometimes even getting the kiddos out of bed and dresses is a full time job. So I can imagine that making a healthy breakfast each day can be a bit daunting. 

I recently purchased Oat Groats from Harvest Local because they gave me a really cool recipe that I wanted to try. Since I've never tried Oat Groats before but have 2 boys that are in love with homemade oatmeal I thought I'd give it a try.

 I've been slacking to say the least. With spring sports it seems almost impossible to have family dinners and I've decided enough is enough and I am getting back into a routine. I seriously have no idea how moms do it with 3-4 children all in different sports, having 2 children in baseball and that is throwing me for a loop.

 We are headed to a Derby Party and I wanted to bring something traditional that would be served in Kentucky on this exact day. I went searching the internet and found this recipe. I liked the main part of it but needed to change a few things to meet our dietary requirements (no beef) and I am not a huge fan of Lima beans so I switched it up and replaced the Lima beans for Cannelloni beans. Growing Celery

I've prepared my garden and soil/compost mix is being delivered tomorrow so I am in high gear to start planting some veggies and herbs this weekend. One of the things I like to plant is celery but it's too late for me to start from seed and I'd like to know where my plants come from so I am trying something new this year.  I am in full holiday mode. Presents are bought, wrapping is being "worked" on and my menu is planned. To beat the rush I went to my local Trader Joes and Farmers Market to purchase everything for Christmas Eve, Christmas morning Brunch and Christmas dinner. I schuduled a time that it wasn't during the morning or evening rush, the stores were next to one another which helped a ton.  It's hard during normal weeks to find the time to eat as a family. Now that the holiday season are on our heels our nights are getting booked with shopping, holiday programs and parties so family dinners are becoming even harder to make happen in our household.

Freezing Corn from the Garden

This year was the first year that I planted corn. Corn on the Cobb is one of my favorite summer vegetables and I've now turned my sons into huge fans as well. At the beginning of our planting season my boys and I design what vegetables we will grow this year and corn was one of them. I was amazingly surprised at how easy it was to grow corn, we did start from plants but they were tiny as we put them in, but within a few weeks they were thriving!

Did you ever think about all the waste that goes into celebrating Halloween? When I found out that swapping half the costumes kids wear at Halloween would reduce annual landfill waste by 6,250 tons, I knew I had to do something to help educate my community. I found this amazing site called Celebrate Green and noticed all the wonderful eco-friendly choices they had for celebrating not only Halloween but all holidays.
