Slow Cooker Cajun Stew

Slow Cooker Cajun Stew is a perfect weeknight meal or bring it as a potluck dish to a party. The base recipe calls for the main ingredients - carrots, celery, onions but you can mix it up - add mushrooms, peppers, zucchini or whatever you have on hand. 

So the next time you need meal plan inspiration or a dish to pass for a potluck with friends try out this super easy slow cooker Cajun Stew. 








Slow Cooker Cajun Stew

Ingredients

1 lb of turkey kielbasa sliced ½ inch thick

1 medium onion sliced into moon shapes

2 carrots finely diced

4 gloves of garlic minced

3 celery stalks finely chopped

1 pepper – either orange or yellow diced

½ lb of any sort of mushrooms coarsely chopped

1 can of diced tomatoes

1/8 teaspoon cayenne pepper

1 lb large shrimp peeled and deveined

1 cup of chicken or veggie broth

Directions

Place all the ingredients except the shrimp into the slow cooker, cover and cook until the veggies are tender – about 7 hours on low or 3 hours on high. Each slow cooker is different so you can judge for yourself. About 30 minutes before you are ready to eat, add the shrimp.

Serve with rice, couscous, barley or quinoa. 


 

FUN FRIDAYS – Quality Time

I will not spend this weekend with my sons. I am traveling to Florida to be with my mom for Mothers Day. One thing I’ve learned over the last year after finding out my mom has stage 4 lung cancer is that quality time matters….A LOT!

This is also the first Mothers Day that I am really sad that I will not be with my boys for Mothers Day. Say what you want about that statement. My boys are 5 and 7 years old which means for a very long time I’ve been changing dirty diapers, wiping butts...

Anyone that knows me online and IRL knows that that I don’t feed my kids McDonalds. Not to say they have NEVER eaten there but as a family we try VERY hard to keep our choices as healthy as possible about 99% of the time.

Real Food - Weekly Meal Plan

 Just got back from Mom 2.0 Summit yesterday and I have to say I am BEAT! I can hardly keep my eyes open and I have NO IDEA what to plan for this week for my Real Food meal plan. Crock Pot ~ Shredded Chicken Tacos

As you know I love the crock pot, as a busy parent I need to make the most of the little time I have each day to prepare a healthy meal for my family. That means I use the crock pot a few times a week to make my life easier. One of my favorite things to cook in the crock pot is pulled chicken. With pulled chicken you can make BBQ a chicken sandwiches, shredded chicken for  tacos, enchiladas or to use with a casserole.

 My meal plan will be short this week, actually just two days. I am traveling to the Mom 2.0 Summit in California on Wednesday morning and will not be home until Sunday. You must think - is she ever home? I have to say not much lately, which has left me very unorganized and a bit frustrated. Any whoo - you don't need to hear me complaining.
