One of the reasons why I LOVE summer is because of all the veggies and herbs I get from my garden, and all the local Farmer Market fines.

I went to West Virgina recently and everyone came with all their produce from their gardens, anything from potatoes, peppers, squash and best of all tomatoes. When I left I got a huge bag to take home, I didn't realize at the time how many peppers I had and I wasn't too sure what I was going to do with them.

After getting home I started looking through my favorite magazines for fun recipes. I decided to roast potatoes and peppers in the oven with some spices and garlic.

        Roasted Peppers
 
                                                                                                               

5-6 Red, yellow, green, red and orange peppers
Olive Oil
3-4 Cloves of garlic- cut in small pieces
Ground Rosemary
1/3 cup of freshly cut basil
Salt and Pepper

Slice peppers in large slices then on a foil lined cookie sheet toss in Olive Oil, Ground Rosemary, Salt and Pepper.

Roasted Red Potatoes




Wash and dry potatoes, lay them on the same baking sheet as the peppers and season the same way.

Bake at 450 until both are tender and browning, every 20 minutes or so flip the veggies so they brown easily.
In the meantime while the veggies and potatoes are roasting, you can make this amazing mixture for the potatoes. This is soooo easy and it really jazzes up the potatoes. Great for company or even a week night meal.

Potato Cheese Mixture

1/2 cup of whole milk ricotta cheese
1/2 cup of fresh grated Parmesan cheese
1 tablespoon of fresh grated lemon zest
salt and pepper to taste

Mix all ingredients together and set aside

Once the peppers are done, place in a bowl and set aside and add basil when you are ready to serve. then move onto the Potatoes. Once the potatoes have cooled enough to handle cut an X into each one and place the ricotta mixture in each one. These two side dishes are great with chicken, fish or meat. We served it with burgers but that is for another post!
